- 1 cup of white sugar
- 1 cup of starter kombucha (unflavored, store-bought or from a previous batch)
- 1 SCOBY(can be purchased at many retailers, like Amazon)
- A large glass jar (1-gallon size)
- Cheesecloth or coffee filter
- Rubber band
Instructions:
- Prepare the Tea: Bring 8 cups of water to a boil. Remove from heat and add the tea bags. Steep for 5-10 minutes. Remove the tea bags and stir in the sugar until fully dissolved. Let the sweetened tea cool to room temperature.
- Ferment the Kombucha: Pour the cooled tea into your glass jar. Add the starter kombucha and gently place the SCOBY on top. Cover the jar with a breathable cloth or coffee filter and secure it with a rubber band. Place the jar in a warm, dark place (around 70-80°F) and let it ferment for 7-10 days. The longer it ferments, the tangier the kombucha will become.
- Taste and Bottle: After 7 days, taste your kombucha to see if it has reached your desired flavor. If it’s too sweet, let it ferment longer. Once it’s ready, remove the SCOBY and 1 cup of kombucha to use as a starter for your next batch. Pour the kombucha into bottles, leaving about an inch of headspace. You can add flavorings at this stage (like fruit juice or herbs) before sealing the bottles.
- Second Fermentation (Optional): For a fizzy kombucha, let the sealed bottles sit at room temperature for 2-3 more days to carbonate. Be sure to burp the bottles daily to release excess pressure.
- Refrigerate and Enjoy: Once carbonated to your liking, refrigerate the kombucha to slow the fermentation process. Enjoy your homemade kombucha chilled.
