Banana Nut Bliss Muffins
Ingredients:
- 2 ripe bananas, mashed
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 eggs
- 1/4 cup unsweetened almond milk
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix mashed bananas, honey/maple syrup, vanilla extract, eggs, and almond milk.
- In a separate bowl, combine whole wheat flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in chopped walnuts.
- Divide the batter evenly among the muffin cups and bake for 18-20 minutes or until a toothpick inserted comes out clean.
Berry Burst Oat Muffins
Ingredients:
- 1 cup rolled oats
- 1 cup plain Greek yogurt
- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup honey or agave nectar
- 1 teaspoon vanilla extract
- 1 cup mixed berries (blueberries, raspberries, or strawberries)
Instructions:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, combine rolled oats and Greek yogurt. Let it sit for 10 minutes.
- Add mashed bananas, eggs, honey/agave nectar, and vanilla extract to the oat mixture. Mix well.
- Gently fold in the mixed berries.
- Spoon the batter into the muffin cups and bake for 20-22 minutes or until the tops are golden and a toothpick comes out clean.
Zucchini Spice Muffins
Ingredients:
- 2 cups grated zucchini
- 1/2 cup coconut oil, melted
- 1/2 cup pure maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (walnuts or pecans)
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine grated zucchini, melted coconut oil, maple syrup, eggs, and vanilla extract.
- In a separate bowl, mix whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the chopped nuts.
- Spoon the batter into the muffin cups and bake for 22-25 minutes or until a toothpick inserted into the center comes out clean.
