Banana Nut Bliss Muffins

Ingredients:

  • 2 ripe bananas, mashed
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions:

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix mashed bananas, honey/maple syrup, vanilla extract, eggs, and almond milk.
  • In a separate bowl, combine whole wheat flour, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in chopped walnuts.
  • Divide the batter evenly among the muffin cups and bake for 18-20 minutes or until a toothpick inserted comes out clean.

Berry Burst Oat Muffins

Ingredients:

  • 1 cup rolled oats
  • 1 cup plain Greek yogurt
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/4 cup honey or agave nectar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, or strawberries)

Instructions:

  • Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a bowl, combine rolled oats and Greek yogurt. Let it sit for 10 minutes.
  • Add mashed bananas, eggs, honey/agave nectar, and vanilla extract to the oat mixture. Mix well.
  • Gently fold in the mixed berries.
  • Spoon the batter into the muffin cups and bake for 20-22 minutes or until the tops are golden and a toothpick comes out clean.

Zucchini Spice Muffins

Ingredients:

  • 2 cups grated zucchini
  • 1/2 cup coconut oil, melted
  • 1/2 cup pure maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or pecans)

Instructions:

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, combine grated zucchini, melted coconut oil, maple syrup, eggs, and vanilla extract.
  • In a separate bowl, mix whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Add the dry ingredients to the wet ingredients and stir until just combined.
  • Fold in the chopped nuts.
  • Spoon the batter into the muffin cups and bake for 22-25 minutes or until a toothpick inserted into the center comes out clean.
